Join us for a hands-on session exploring creative ways to cook vegetables using techniques that bring out deep, complex flavors. We’ve invited Leon Dieterich, a chef with experience in several fine dining restaurants in Berlin, to guide us through the process. Inspired by Middle Eastern cuisine, we’ll experiment with methods that make it easy to transform vegetables into standout dishes at home.

We’ll also be making our own pickles, which you can take home afterward—please bring a glass jar (400-800ml) if possible!

Techniques We’ll Cover:
1. Confit (Leeks)
2. Pickling (Beetroot)
3. Roast (Beetroot Carpaccio)
4. Burn (Carrots)
5. Fry (Parsnip Chips)

Plus, we’ll whip up a mustard seed condiment and a tahini dip to complement our dishes. After we are done we are going to dive into our preparations with some middle eastern bread.
